In preparation for Peru's independence day on July 28th, my cousin and I decided to invent our own version of a typical dessert from Lima - Suspiero de Limeña (literally "Limean woman's sigh"). The dessert is a made with a bottom layer of manjar blanco topped off with meringue and cinnamon. We tried to stick to its roots while adding our own touch of creativity. The base is made of a rich and light white cupcake batter filled with sweet manjar blanco (dulce de leche). To top if all of, we made sweet sweet meringue that ended up looking like clouds. Funny since usually in the winter time the city of Lima is overcast with the sky resembling a "panza de burro" (donkey's belly).
